Power Outages to Paninis

So this day started out with a power outage. 7am my fan popped off and woke me up to the lovely reality that our power was out.

ClassHungover. Not fun. (Reminder to self – limit Wednesday night Karaoke nights if you want to be prepped and ready to go for Thirsty Thursday)

Run – Amazing, head-clearing, endorphin-filled 8 miles. Feel like a brand new person. At 8:12 pace! Tried to make it a slow, easy run but that obviously did not happen.

Dinner – mouth-watering apple and brie cheese panini. Picture will be coming. Paninis are awesome.

Kara is visiting, and its Sarah’s first bar night as a 21 year old. This is going to be a good night. I will have stories tomorrow…


Pork belly and meal plans

Morning! Woke up bright and early this morning at 5:55 on the dot to turn on the Women’s Olympic marathon! It was a nasty, rainy day there in London but still amazing how they got to run such a breathtaking course. It would be a dream come true to be able to run that course, all throughout London and past the beautiful monuments. Even on a rainy, dreary day I would be drooling. Past Big Ben, the London Eye, the Thames, Buckingham Palace. I want to go to London soo badly. I was supposed to study abroad there this summer, and I would have been there right now, watching the marathon in the rain instead of from my bed in Albany. But then I was offered this internship with GE instead and figured I could not pass up this opportunity. London will always be there waiting for me. Someday London, someday. As soon as there was a commercial break I grabbed this ——> yummm coconut macaroon iced coffee with vanilla coconut milk. I love all of Silk’s milks, the vanilla coconut one I just found this summer and it is really good, coconuty and creamy.

My legs are pretty sore today after my crazy duathlon yesterday. My parents and I ended up biking about 20 miles on the Mohawk-Hudson trail. Then we went to one of my bosses’s houses for wine, grapes and cheese. I made sure she picked up a bottle of Oyster Bay Sauvignon blanc, my absolute favorite. So crisp and fruity and refreshing. Then we went to New World Bistro Bar for dinner, which is known for their spicy foods. My boss made me go with the pork belly, (ewwwww I know), which I have kind of always wanted to try. You only live once right? Turns out its a delicacy and like 800 calories but it was delicious and something I will probably never eat again, but thats okay. I can now say that I have had pork belly. Can you say that?

I chomped on Grape Nuts and blueberries this morning while watching the marathon, but I am already starving again. And I am supposed to get out for a 5 mile run today… this should be interesting. I winced a little bit getting out of bed this morning. And considering its already 9:00 and a steamy 80 degrees I may be putting this run off until tomorrow morning. But I do love getting my endorphin fix, so I will keep you posted. There is absolutely no food in my apartment so today will include a trip to Price Chopper. Yayyyy grocery shopping! Here is the dinner plan for the week:


  • Sunday: Baked chicken w/ spicy tomato sauce, black olives. Sweet potato wedges
  • Monday: Baked salmon in foil w/ feta, asparagus, cherry tomatoes, summer squash
  • Tuesday: Almond crusted tilapia, quinoa, summer squash
  • Wednesday: Connecticut (nervous!)
  • Thursday: Scrambled egg and avocado pita
  • Friday: Moving home!
  • Saturday: Cape Cod!

Back at it?

HA. Wow. It was a whole year ago I once tried to become a blogger, by starting this blog to whine about my knee injury. So much has happened since then. I am not that little girl anymore. That may sound too wise and mature for the ages, and I am only 20 years old, but the events of this past year have forced to evolve and become the confident, independent woman that i am proud to be today.

Ok enough with the sap and weirdness. I am in Albany, with a big girl internship at GE Capital Real Estate. I have lost 12 (ish) pounds, won two scholarships, achieved this internship and a 3.9 recent semester GPA, gained 5 more half marathon experiences under my belt and a duathlon, fallen in love with my bike, and broke my PR that I gained one year ago at the Amica Ironhorse half marathon. I am 4 weeks into my marathon training, and my running becomes better with every passing day. I know how to cook healthy dinners, pack yummy lunches, and I finally have my own apartment at school next year. I have discovered the food staples in my diet and I have decreased the size of my stomach. My six pack is still a work in progress. I have formed new friendships and strengthened past ones, and I have become closer than ever to my parents, the two people who love me unconditionally and have supported me through every single one of my crazy ventures. I am homesick thinking of them now, and miss them more than any 20 year old should. My mom is my best friend, and I am not ashamed to say that (just feel a little silly). I am more than happy with how my life has progressed, and I live every day making sure to do what I love and stay smiling. I am an organized neat freak and an annoying, anal perfectionist.  But I would not have it any other way.

My goals for the rest of the summer. Finish out the last three weeks of this internship with a bang. Finalize my project, do not be scared to ask to take on new projects, figure out what I want to be doing at this time next year. Apply to a GE leadership program, but also consider other options. Sort out of my feelings for a certain intern, and for a yearning for the past. Do not get caught up in being lonely and settle for something that could possibly be just that, settling. Look forward to a weeks vacation on the beach with my family, and the anticipation of preparing for senior year. Get everything together for the new apartment, and try not to stress out too much during that last week of summer. Try to save some money too, and have it last at least the school year until I have a real job again (hopefully).

Enjoy the marathon training. You are working hard and you deserve every mile and will enjoy every muscle cramp and ache, every drip of sweat and pain of fatigue. It will be the experience and accomplishment of a lifetime, and there will be many more to come. That I am sure of. Continue reading your beloved blogs, and maybe, just maybe, continue your own blog. Hey, you sure have the time now, so why not? Keep pining for the weights and strength training, and wishing you had the finances to regularly attend Crossfit. Just know, that this year it probably wont happen, but you will get your muscle and strength definition back soon, with the free UConn gym weights. It will be fun to attend all the classes and get back into a fitness schedule.

Enjoy every moment and do not take any of this for granted. You are exactly where you need to be. Now use this blog to get all those jumbled, need-to-be-organized thoughts out on paper (or internet), and know that you are crazy. and a very odd and not very normal 20 year old college student. But thats what makes you, you. Be proud.


I did the elliptical this morning!!! 35 minutes of sweaty heaven with no knee pain! I am a happy girl. And after that it was an intense 75 minutes of power yoga, I was sweaty!

Before the gym though this was a fun breakfast

Carrot cake oatmeal! It has oats, vanilla soy milk, carrot pieces, walnuts, brown sugar, and cinnamon. I got it off of Tina’s Carrots n Cake blog, which I am obsessed with. I need to learn how to put links to blogs, all of this stuff is tricky.
After the gym I came home and made myself a shake of espresso, a banana, chocolate vitamin powder, and vanilla soy milk. It was tasty!

Now I am snacking on a lunch of a wheat wrap with pork, goat cheese and lettuce, and some cherries and more soy milk.

I have work tonight 2 to close, and then have to work tomorrow morning 6-2. yippie! oh well I need this paycheck. and then hopefully some back to school shopping, enjoy the rest of your saturday!

Quest for new workouts!


Breakfast at 5 am this morning before work

-Irish oatmeal packet with a tbsp of maple syrup and some blueberries, also half of a grape fruit

-I am trying to take it easy on the peanut butter now that I am not doing much physical activity

Lunch at DD:

-lots of green tea

-honey nature valley granola bar

-avocado and turkey sandwich

-gala apple


Dinner = SUSHI! yum yummm it has been way too long

did a body pump class tonight… first one ever! It was fun, but I used too light of a weight. relaxing tonight and then power yoga in the morning! Yay for finding other ways to get out of my work out stress… MRI results should be in next week!


Bummin’ It

Hello! I just returned from a visit to the cape, which is part of the reason why I have been so MIA. I was visiting my best friend in Eastham, and along the way I stopped for dinner at my old roommates house and saw her family! It was a great trip. And it also somehow turned into a sample of every ice coffee made in New England basically.


I had read about Marylou’s coffee in another blog and I just had to find one to try it! On the way there I got peanut butter wonderful and on the way back I had copa banana. Preferred the banana one much more! I am a sucker for bananas.

The Cape was beautiful and so relaxing! Just what I needed to get my mind over my knee injury.


So I have been resting it for almost two weeks now. This means no running, biking, elliptical, nothing. I have been weight training and doing some leg strengthening exercises, but nothing that makes it hurt.

Today I saw an orthopedic surgeon and I am finally getting an MRI on it tomorrow!!! 🙂 maybe now I can finally figure out what is wrong with it.

Workout today:

1. Upper body weights

2. Lower body weights, (successfully did squats, but no lunges)

3 . Ab workout

4. Walked the dog

I was sweating and happy! Off to do errands and ice the knee, enjoy the afternoon!

“Feel Great” Weight

Good Morning!

Parents left this morning! So Scout woke me up at 6:30 when they walked out the door with his outrageous barking, and then of course I realized I was starving so I got up and created this amazing breakfast from my recipe book:

Oatmeal-crusted banana stuffed french toast with blueberries yum! And a glass of skim milk. Last night I was up until about 11:30 and got starving watching Pretty Little Liars so I snuck a little snack of green tea, apple juice, and some apple sauce heated up with cinnamon! I read somewhere that you could fake an apple pie by doing this

So I was reading my favorite blog this morning, Carrots n’ Cake, and the blogger, Tina Haupert writes articles for Health magazine that I follow obsessively. I really would love to meet her someday. But anyways she wrote about your  “Feel Great Weight” today.

She has some great advice, and I love her definition about what your Feel Great Weight should feel like. I think that I am at my feel great weight right now, I am just nervous that since I am stopping all physical activity, I am going to lose it. I am trying to eat better, but I really love to eat and I love my sweets so it is hard. It is a challenge! I am still going to be doing strength exercises so hopefully that helps keep my metabolism up.

I mean I stress about my thighs and my abnormally large behind and of course the always present cellulite, but I really do have a strong, great body that I should be proud of. I have worked hard for it. Now I just need to rest and take care of it.

I am off to make cupcakes for my friends birthday, she is visiting tonight! Enjoy the beautiful weather
